Toasted Overnight Oats

Sometimes getting out of the house in the morning is tough — and it becomes even harder when you are trying to eat a healthy breakfast on the go.  This hearty breakfast comes in to save the day in a perfect combination of nutrition and speed.  With just a few minutes of prep work the night before, you have a great grab-and-go breakfast waiting for you in the morning.  Oh, and it’s delicious, too!

Ingredients:

  • 4 cups rolled oats
  • 1 cup roughly chopped almonds
  • ¼ cup ground flax seeds
  • 1 packet Spice Blend 12
  • ¼ tsp salt

Toppings:

  • Medjool dates, pitted and roughly chopped
  • Frozen blueberries
  • Almond milk
  • Maple syrup or agave nectar

Directions:

Preheat the oven to 350oF.  Place dry oats and almonds on an ungreased cookie sheet and bake 10-12 minutes until fragrant and slightly browned, tossing halfway through.  Once cooled, mix together with flax seeds, contents of spice blend, and salt.  Store in an airtight container.

To serve, add desired amount of mixture to a glass jar or other container with a lid, add a handful of blueberries, 2-3 medjool dates, and cover with almond milk.  Allow to soak at least two hours or overnight in the fridge.  When ready to eat, top with additional almond milk and maple syrup (if using).  Mix together and enjoy!
