Fresh Summer Rolls with Spicy Peanut Sauce

Makes 12 rolls

These fresh summer rolls make a quick and delicious lunch, snack, or meal on the go.  Paired with our spicy peanut sauce, they are irresistible.  They are infinitely versatile and perfect for a warm Summer day.  Take advantage of local, in-season produce to turn these into a regular favorite.

 

For the Sauce

¼ cup peanut butter

¼ cup warm water (plus more if needed)

1 tbsp low-sodium soy sauce

½ lime, juiced

1 tbsp raw honey or agave nectar

1 packet Ground 2 Table Spice Blend #2 (Spicy All Purpose)

1 clove garlic, minced

1 ½ tsp fresh grated ginger

 

For the Rolls*

12 spring roll wrappers/rice paper rounds (good to have extras on hand in case one tears)

1 ripe avocado, sliced lengthwise into 12 even pieces

1 medium cucumber, sliced into 2-3 inch matchsticks

1 carrot, sliced into 2-3 inch matchsticks (a mandoline is helpful here)

12 small-medium sized butter lettuce leaves (or other soft lettuce)

¼ cup mint leaves

2-3 oz tofu, sliced thin and lightly grilled if desired

 

Directions

To make the sauce, add all ingredients to a small bowl and whisk until smooth.  Add additional water (if needed), 1 tbsp at a time until the desired consistency is reached.

To make the summer rolls, lay out all prepared filling ingredients for easy access.  Fill a wide, low bowl or baking dish with warm water.  Place one rice paper wrapper in the bowl and let soften completely, about 10-15 seconds.  It will take a bit longer if your water is cooler.

Lay the softened rice paper wrapper flat on your work surface.  Gently smooth it out if it is bunched up or wrinkled.  In the lower (closest to you) center section of the wrapper, place one leaf of lettuce.  Make sure to leave at least 1 inch of the wrapper uncovered.  

In a compact vertical line, arrange your fillings on top of one another, being sure to leave some space on either side of the line (similar to how you would fill a burrito).  When ready, fold the lower edge of the wrapper on top of the filling, gently stretching it as you go.  Keeping the filling as compact as possible, fold the left and right edges of the wrapper inward (similar to rolling a burrito).  While keeping your summer roll tight, roll it away from you until you reach the upper edge of the wrapper.  Repeat with the remaining rolls and serve with peanut sauce.

*Feel free to experiment with fillings.  You may include ingredients such as shredded cabbage, mung bean sprouts, sliced mango, sliced bell peppers, chicken, etc.  Get creative and enjoy!
