Egg, Avocado, and Tomato Toast
Looking for a simple brunch or lunch with a huge wow factor? Look no further. These beauties take avocado toast to such an awesome and delicious level.
6 slices thick artisan bread (we used Ciabatta)
6 eggs, cooked Sunnyside up or fried
1 medium avocado
2-3 medium or 1 large heirloom tomato
1 packet Ground 2 Table, Spice Blend #1 (our All Purpose blend)
Extra Virgin Olive Oil
Sea salt (optional)
Cook eggs Sunnyside up or fry in olive oil as preferred. While eggs are cooking, toast bread and cut thick slices of avocado and tomato. When ingredients are ready, lightly drizzle olive oil on toast, and top with slices of tomato, avocado, and egg. Repeat with remaining slices. Divide the spice packet evenly (on top of eggs) and sprinkle with sea salt if desired. Serve immediately.
