Looking for some simple yet fabulous additions to your dessert repertoire this holiday season? These easy and decadent tasting date truffles definitely fit the bill. Healthier and easier to make than traditional truffles, these yummy treats are gluten, dairy, and refined sugar free, yet they are still packed with flavor and will keep your guests coming back for more.
- 15 soft medjool dates, pitted
- ¼ cup almond meal
- 1 packet Spice Blend 12
- 1 packet Spice Blend 6 (optional) OR zest of 1 medium orange (optional)
- 2 Tbsp coconut oil
- 6 Tbsp raw cacao powder
- Splash of hot water
- Additional cacao powder for rolling
Combine dates, almond meal, spice blend(s), coconut oil, orange zest (if using), and 4 Tbsp cacao powder in a food processor or high-speed blender. Pulse/blend until a smooth paste forms, 1-3 minutes. Scrape down sides of the blender frequently. On low speed, add in final 2 Tbsp cacao powder, adding a splash of hot water if needed and blend until fully combined. Refrigerate mixture 10-15 minutes.
To make truffles, roll the date mixture by hand into 1-inch diameter balls and coat evenly with additional cacao powder. Serve immediately or store in the refrigerator for up to three days.
Looking for some heat? The addition of Blend 6 adds a nice spice to these truffles. But perhaps you like your truffles heat free, in which case the addition of orange zest adds a lovely complexity and pairs beautifully with the caramel tones of the dates and the warm spices of Blend 12.
